This Saturday, Saturday Night Diner is bringing to Trivandrum a favourite of the Japanese - Tonkotsu Ramen. The noodle soup that was started as a street fast food, ended up being a staple after a mistake by one of the cooks. He ended up boiling the pork bones longer than he was supposed to, that the broth turned milky from the overcooking. This overcooked broth ended up having more flavour and mouthfeel that it became the preferential way of making the dish, henceforth. "Ton" refers to Pork, "Kotsu" refers to Bones and "Ramen" refers to "Pulled Noodles".

Another Italian Night took form at Saturday Night Diner yesterday. Eggplant Parmiggiana with its origins in Southern Italy and Chicken Parmiggiana, an adaptation of the same dish that was created by the Italians, who had moved to America, were the hero's of SND Kitchen last evening. Both were served along with Spaghetti tossed in a Pesto Cream Sauce & our version of Insalata Caprese, the famous Tomato Mozzarella Salad.
The heady flavours of fresh basil and tomato ruled SND Kitchen, making the day and absolutely delicious one!! Thoroughly enjoyed the cook!!😍

It was a weekend that I had looked forward to, for I was hosting an 8-course French themed Degustation Menu at SND Kitchen for the first time as part of my SND Dine-in Chef Table concept. Not only did I manage to pull it off with ease, the customers thoroughly enjoyed each course and had an amazing time with each other. The Wine & Dine exclusive dinner was an immense success. Each course was paired with an appropriate wine option to enhance the flavours of the dish. It was a new experience for most of the clients and their happy faces & contended stomachs, gave the SND Team the reassurance that we are on the right track!!
Our next SND Dine-In Chef Table event is slated for June. Dates will be announced shortly.

So, here we are back with the proposed 8-course sit-down fine-dining Chef's Table dinner.
