Char meets its perfect match in this vibrant mango salsa—zesty, fresh, and bursting with flavour. Pair it with nutty brown rice and a crisp, refreshing salad, and you have a harmony of tastes and textures that turns any meal into a culinary celebration at home.

🐟 Arctic Char with Mango Salsa
(for 2–3 people)
2 Arctic char fillets, boneless
Salt & pepper
Olive oil
Butter

Instructions:
Season the fillets with salt and pepper. Heat olive oil in a pan, cook fish skin side down until crisp, then flip and finish for 2–3 minutes. Add butter at the end for flavor!

Mango Salsa:
1 mango
2 tomatoes
1 spring onion
1 avocado
Handful of fresh coriander
Salt & pepper
Good olive oil
Juice from ½ lime

Chop everything small, mix, and drizzle with lime juice and olive oil. Serve the fish warm over fresh spinach topped with salsa.

Looking for a healthy weeknight dinner idea? Try this quick and flavorful Arctic char recipe from Kristjana Steingrímsdóttir (Jana), featured on mbl.is.

Arctic Char with Dates, Arugula & Sun-Dried Tomatoes
2–3 Arctic char fillets
6–8 pitted dates
1 handful arugula / rocket
3 tbsp finely chopped sun-dried tomatoes
1 garlic clove, pressed
1 lemon, juice and zest
A splash of olive oil
½ cup grated parmesan
Salt & pepper to taste

Instructions:
Place Arctic char fillets in a baking dish, season with salt and pepper.
Chop the dates, arugula, and sun-dried tomatoes, stir together in a bowl.
Add pressed garlic, lemon juice and zest, olive oil, and grated parmesan.
Spread this mixture evenly over the fillets.
Bake at 200°C (390°F) for about 16–18 minutes.
Serve with a fresh salad and rice.

We took proactive steps over the last three years to develop our own broodstock fish using top genetic material from Hólar University. The first batch of eggs arrived in 2023, and while it takes a few years before these fish are ready to spawn, this new facility has already helped us secure two groups of future breeders.

The building has been housing several hundred of our breeders, with the oldest group nearly 3 years old. Once a larger breeding facility is built, this facility will be used to grow fingerlings for our expanded production.

We have worked closely with Hólar University to ensure a year-round supply of eggs, using environmental cues to encourage off-season spawning.

The largest fish have already reached 5kg in weight and we are curious to see how their first spawning will go.

This is yet another more step in our ongoing commitment to quality, sustainability, and meeting the needs of seafood lovers everywhere.

We recently had the pleasure of welcoming the teams from our customers Ltd. and FreshDirect to visit our facilities here in Iceland. It was a fantastic opportunity to share insights about our sustainable Arctic char farming and discuss future collaborations.

By working together, we’re able to bring responsibly farmed Arctic char from Iceland to tables across North America—fresh, traceable, and true to our seafood heritage. These collaborations help us set new standards for what great seafood can be.

To top off the visit, we enjoyed a delicious Arctic char flatkaka dish at a local restaurant in Reykjavík—a taste of Icelandic culinary tradition.

Building strong partnerships and celebrating our shared commitment to premium, responsibly farmed seafood is what drives us forward. Thank you for the visit, Hjörleifur, Kavita, and Marie-Claire.
