In Iceland, Christmas food reflects our relationship with the sea, shaped by seasonality, simplicity, and respect for the raw material.

Some of the seafood dishes we look forward to every year include:
• Salt cod (Saltfiskur): carefully preserved, then simply prepared with butter and potatoes
• Cold-smoked Arctic char: delicate, clean, and naturally rich
• Gravlax: lightly cured salmon with dill, a Nordic classic, typically served with a dill-mustard sauce
• Smoked salmon with traditional Icelandic rye bread, shared at the table
• Síld (Pickled Herring) — served in a variety of marinades (onion, curry, beet) on rye bread (rúgbrauð) as part of festive buffets

These are the flavours many of us grew up with — simple, seasonal, and made to be enjoyed together.

Known for its firm, Fluffy white flesh and mild, delicate flavor, Wolffish is a versatile choice loved by chefs and seafood lovers worldwide. Atlantic wolffish can normally be found in the Westfjords of Iceland. It is a prized catch to recreational and commercial fishermen alike. They have very strong jaws and teeth to enable them to crush shellfish and echinoderms.
