The biggest challenge with chicken liver is keeping it soft and avoiding any metallic or gamey smell. In this video, I’m sharing the exact cleaning trick and cooking technique so your kaleji turns out rich, spicy, and melt-in-your-mouth soft every single time.
🛒 INGREDIENTS
Chicken Kaleji (Livers): 500g (washed & drained)
Oil/Ghee: 3 tbsp
Onions: 2 medium (finely chopped)
Tomatoes: 2 medium (pureed or finely chopped)
Ginger-Garlic Paste: 1 tbsp
Green Chilies: 2-3 (slit)
Lemon Juice / Vinegar: 1 tbsp (for cleaning/marination)
Dry Spices:
Cumin powder: 1 tsp
Coriander powder: 1.5 tsp
Red chili powder / flakes: 1 tsp
Turmeric powder: 1/2 tsp
Garam masala: 1/2 tsp
Kasuri methi (dried fenugreek): 1 tsp
Salt: to taste (added at the very end!)
Garnish: Fresh coriander, julienned ginger & lemon slices
💡 3 PRO TIPS FOR PERFECT KALEJI:
The Cleaning Trick: Soak kaleji in water with 1 tbsp vinegar or lemon juice for 10 minutes before washing to completely remove any odor.
Don't Overcook: Chicken liver cooks extremely fast (around 8–10 minutes). Overcooking makes it rubbery and dry.
Add Salt Last: Adding salt early draws out moisture and toughens the liver. Add it right at the end of cooking!
