L'argilla trattiene l'acqua e dà struttura e corpo.

🐚 Two hundred metres above the sea. But we used to be under it.
Terroir is an overused word. Here it means something concrete: the soil on these hills is clay, and in several parcels it is full of marine fossils — what is left of the time this was a seabed.
The clay holds water and gives body and structure. The fossil content brings salinity: the thing that stretches the finish and makes you want the next bite.
It isn't brochure talk. It is why our wines carry that saline close you would recognise blindfolded.
Twenty hectares, ten varieties, and a soil a few million years older than we are.
