There’s a difference between olive oils.

Laudemio isn’t a type of olive oil.
It’s a mark of excellence, reserved for the finest Tuscan extra virgin olive oils.

At Fattoria San Michele, our Laudemio is also organic.
Not all Laudemio oils are — this one is.

That combination of standards and care
is one of the reasons why it’s recommended by Dr. Berg.

Quality speaks for itself.

At Fattoria San Michele, every vineyard decision is made to respect the land and enhance the wine.
Discover the 3 vine training systems we use:

Spur-Pruned Cordon – A simple, linear structure that’s easy to mechanize. It ensures even ripening and balanced cluster distribution. Ideal for producing top-quality wines.

Guyot – One long cane and a short renewal spur. More buds = higher yield. It requires more work, but it’s perfect for delicate varieties and fruity wines.

Gobelet – Grows without support, like a small bush. Naturally protects grapes from heat and wind. Suited for high-density vineyards. The oldest method, already used by Greeks and Romans.

Three techniques, one philosophy: handcrafted care for every single vine.

🦋🐞🌿Biodiversity is our strength.
In our land we don’t just have vines, olive trees, wheat... there is an entire ecosystem: wild herbs, flowers, insects, birds, reptiles...
Each element has its role and contributes to the balance of nature. We have been following principles of organic farming since 1993, without the use of pesticides and chemicals. Supporting organic means creating the ideal conditions in which biodiversity can thrive. Growing in harmony with the environment means respecting the land, its rhythms and its richness. Biodiversity helps us protect plants, improve the soil and produce wines that tell the story of a truly living and unique territory.

In May, spring is in full swing—and just a drizzle of our organic Laudemio brings out the best in seasonal ingredients. At their peak, asparagus pair beautifully with a gently cooked egg—whether slow-cooked or simply fried—and a touch of Laudemio ties it all together.

When the olive oil is this good and the ingredients are in season, it takes very little to create something truly special.

We’re plowing under fava beans — a small but powerful act of care for our vineyards. 🌱

Planted between the vine rows, fava beans naturally enrich the soil by fixing nitrogen and restoring deep nutrients, boosting fertility and vine health without synthetic inputs.

It’s all part of our sustainable approach: working with nature to create wines that truly reflect our Tuscan land.
