Initially planned as a spiced dubbel, this recipe was modified based on special malts remained in my storage in order to use as many of them as possible, obtaining a beer with a totally different grain grist but maintaining the characteristic elements as yeasts and candied sugar, all enveloped in spices typical of spiced beers and mulled wine. More hops were added to balance the special malts sweetness.

The result is a deep amber beer characterised by fruity and spicy esters with notes of honey, caramel, aniseed, cinnamon and a slight hint of bread. It starts very sweet on the palate but is immediately balanced by a bitterness that cleanses and balances the mouth very well, leaving a sufficiently dry finish enveloped in spicy and honeyed hints.

The spicy part is a little unbalanced, several spices used are not noticeable (but probably this is better to avoid an aromatic "chaos"). I will work on this, removing some spices and balancing the others better. The grist in this edition is unplanned and not vary clear, so I will go back to the original recipe. A part that I am very satisfied, the yeast blend has resulted in a truly excellent aroma and the beer is very good overall.
