Summer slowly finds its way into the jars of Conserve Gentile.
It is an age old tradition, born from the need to preserve the genuine taste of tomatoes through the colder months, when the sun has lost its warmth. Over time, it has become much more than a necessity: a ritual, a gesture passed down through generations, a way of preserving not only an ingredient, but a piece of the season.
Selecting tomatoes at exactly the right stage of ripeness, working them while the sun is still warm, and sealing them in a jar, knowing that in a few months that scent of summer will return to the table.
This is what we are experiencing in our workshop these days, under the watchful eye of Mamma Maria.
