A century of innovation serving the tradition
Savignola Paolina is a historic winery in the heart of Chianti Classico, one of the pioneers of this unique famous region. Since more than 300 years, we produce a native wine known for its high standards of quality and elegance. Although Savignola’s cellars date back to the 16th century, it was not until after WWII when Paolina Fabbri, one of the firs
t women conquering the world of wine, started creating this unique wine that we still appreciate nowadays. From the vineyards to wineries, Paolina taught us to combine tradition with innovation, harvesting the highest quality, often at the expense of productivity. Merging her name with the property, Paolina desired to seal the indivisible connection between the winemaker and his beloved land, between the intrinsic value of nature and the benefit of man’s ingenuity and passion. Paolina taught us to remain at the forefront of innovation in all aspects of the wine making process, as a mean to rediscover and enhance the authenticity of original flavors, in a constant drive for quality. The winery extends over 5 hectares of vineyards, producing around 25.000 bottles per year, along with a small volume of extra virgin olive oil. Savignola Paolina wines are born from an assiduous search for intrinsic quality and an elegance of taste that fascinates without being noticed: authentic and recognizable but better rounded than a pure Sangiovese.
