From Tenuta San Carlo to Quintosapore. 🌾

During a recent visit to Quintosapore in Umbria, Nicola Giuggioli prepared this vibrant salad using our organic Ebano black rice. We’re happy to have it back in both 500g and 1kg packages. Flooding the fields. 🌾 One of the final stages before the rice begins to grow. This specialized machine broadcasts rice seed onto flooded paddies on steel wheels designed not to sink into the soft earth below. As it passes through the water, the broadcaster distributes soaked rice seed across the field — the beginning of the season’s crop. Soon, bright green shoots will emerge.

These fields are currently in bloom — a side effect of the rhythm of spring fieldwork. Since they’re secondary plots, we’ve prioritized other areas first and haven’t terminated the cover crops here yet. The result is a temporary burst of flowers before the next stage of the season begins. ✨

Our Maremma cattle herd moves together through the pine forest, grazing beneath tall canopies before drifting into the open fields. They breathe salty coastal air. Open land, shade, and space to roam. 🐮

Casale Oleo is a short drive inland from the farm. The view of the sea is the same, only here it opens into a full 360 of rolling hills, olive groves, and that long stretch of Maremma coastline in the distance.
The risotto alone justifies a multi course dinner, but it’s really about the whole experience of being there, especially if you find yourself in the Grosseto province.
