Juicy Salmon with Shrimp & Creamy Topping
* •Tender, flavorful, and ready in 20 minutes! Treat yourself and your loved ones!
Ingredients (2-3 servings):
• Salmon fillet - 500 g (1 lb)
• Cream cheese - 250 g (8 oz)
• Sun-dried tomatoes - 70 g (½ cup, chopped)
• Fresh dill - 1 tbsp (chopped)
Baby spinach - 30g (1 cup)
• Shrimp (peeled) - 6-8 pcs
• Capers - 1 tbsp
• Olive oil - 1 tbsp
• Salt, black pepper - to taste
Instructions:
1) Preheat oven to 210°C (410°F).
2) Place salmon in a baking dish, drizzle with olive oil, season with salt and pepper.
3) Mix cream cheese, dill, spinach, sun-dried tomatoes, capers, a pinch of salt, and pepper.
4) Spread mixture evenly over salmon, top with shrimp.
5) Bake for 15-18 minutes until salmon is tender.
Serve with veggies or rice!
