Celebrating our Hong Kong ITALICUS Bar Artist 2025, Wong Chung Hang from Quinary Bar with his aperitivo cocktail “Silk Road”.

Wong’s drink “Silk Road” was inspired by the art of architecture, blending the timeless elegance of Italian design with the spiritual depth of Chinese temples and palaces.

His drink reimagines the art of fermentation, uniting Italian aperitivo tradition with sake and tea culture to create a refined, cross-cultural spritz.

Made from ITALIUS Rosolio di Bergamotto, Sake and clarifed passionfruit juice infused with jasmine tea. Served in a tea cup and garnished with olives seasoned by Sichuan peppercorn oil and star-anise.

“Berga Spritz” is the winning cocktail of New Zealand ITALICUS Bar Artist 2025 Jack Driver from Regent Bar.

Jack’s aperitivo cocktail was inspired by the artist Mark Bradford and the layering techniques he uses to make large scale installations. Starting from this he created a unique drink of art, layering multiple bergamot flavours on top of each other:
ITALIUS Rosolio di Bergamotto blends with Bergamot Oil inflused with Bianco Vermouth, Earl Grey Tea, Bergasoda and Sicilian Green Olives, all served in a Lowball Glass.

You have until 15th May to submit your entry to ART of ITALICUS 2026 Aperitivo Challenge. How do you reimagine the Spritz?

Here is Giovanni Allario from Moebius in Milan reinterpretation of the aperitivo drink with Duetto:

60ml ITALICUS Rosolio di Bergamotto
10ml lime and lemon juice
5ml orgeat
2.5ml Casa Savoia Rosso
2 drops vegan foamer
Top with 30ml Prosecco
Lemon zest

AOI25 Aperitivo Challenge German Bar Artist Jan Sporleder from Bar Seibert with “La Bellezza” aperitivo cocktail art.⁠

Jan’s creation “La Bellezza” was inspired by the concept that art is any human activity shaped by knowledge, practice, imagination, and intuition. In particular the art of the Rosolio-making that was brought to Florence by monks from Spain and spread through Catherine de Medici’s marriage.⁠

Made from ITALICUS Rosolio di Bergamotto, Olive Oil washed in Dry London Gin, Verjus, Limoncello and Basil Oil, “La Bellezza” blends flavours from different Italian regions and capturing the beauty of Italy. ⁠⁠
