tari di vigneto bio, di cui una porzione risalente ai primi anni Ottanta, vasche in cemento vintage, fermentazioni malolattiche totali e rifermentazioni lunghe nella cantina sotterranea circondata da un torrente ipogeo. L'azienda produce 350mila bottiglie all’anno, suddivise tra i Franciacorta classici, i Demetra Brut Nature e i DØM Riserva Dosaggio Zero. In 1979, Teresio Schiavi, a winemaker from Fortunago, Pavia, realized the dream of making a Pinot Bianco sparkling wine in Franciacorta. After 40 years, this grape variety continues to be a source of pride for this family-owned winery in which Alessandro and Alberto Schiavi, oenologists like their father, also work with enthusiasm today. Mirabella, whose name derives from the locality where the company's first vineyard was planted, has 45 hectares of organic vineyards, of which a portion dating back to the early 1980s, vintage concrete vinification tanks, total malolactic fermentation, and long refermentations in the underground cellar surrounded by a hypogeum stream.
