Opening a bottle of Dom Pérignon Vintage 2000, and encountering one of the most contemplative expressions of this house. The 2000 vintage may not be celebrated among the very best and in my tasting it showed signs of fatigue: softer mousse, diminished freshness, aromas tilted decisively toward tertiary realms. Yet therein lies its appeal.
👃🏻On the nose: gentle toasted brioche, almond skin, hints of dried mango and licorice, subtle citrus peel.
👄On the palate: a mellow effervescence, more texture than sparkle, the fruit now seasoned: cooked apple, lemon rind, oyster shell minerality.
✨If you’re expecting youthful fireworks, you’ll be disappointed. But if you appreciate the quiet evolution of a vintage cuvée entering a more reflective phase, it’s quite suggestive.
