In the middle of the most intense time of the year 🍇
But what are the steps of our harvest and why we do so?
1. Handpicked 🍇
The first selection always begins in the field. Every bunch chosen by hand, by eyes that know this land.
2. 15 kg baskets
Small crates, on purpose. It’s the only way to bring the grapes to the cellar as whole and intact as they left the vine
3. A short trip
From vineyard to cellar: about 10 minutes. We work the grapes as close to “just picked” as we can get
4. Gentle pressing
Soft extraction is everything here — it’s where the elegance of our w**es begins. As many whole grapes as possible, treated with care, not force.
5. Temperature, under control
The yeasts need room to do their work. Keeping the cellar cool lets them resolve the sugars at exactly the right pace — no rushing
6. Remontage
Pumping the must over the cap, keeping the vat in balance — a daily rhythm that shapes the w**e to come.
7. Délestage
Draining and returning the must to pull colour and aroma gently from the skins — where so much of the w**e’s character lives
8. Checked, every single day
In these first weeks, w**e is a living thing. We taste, we watch, we feel — because this is where a vintage finds Casaloste style and philosophy.
9. Racking
Time to leave the skins behind, having given everything, and keep the mosto fiore.
10. Pressing, no waste!
Getting every single drop left. Now it settles — quietly getting ready for its years of aging.
And what about the skin… well did you ever try our grappa?😎
