È proprio da qui che nascono le nostre varianti: dalla voglia di rispettare l’identità del Pippo e, allo stesso tempo, giocare con ingredienti, profumi e nuovi abbinamenti.

Il risultato?

Pochi ingredienti, scelti bene. E una ricetta che a Pistoia significa molto più di quanto possa raccontare un semplice biscotto.
Il Pippo nasce così: da una pasta frolla genuina, lavorata artigianalmente nel nostro laboratorio e da quella forma rotonda che per generazioni ha accompagnato la festa di San Bartolomeo.
Noi abbiamo scelto di prepararlo tutto l’anno.
Perché certe tradizioni sono troppo buone per durare soltanto pochi giorni.

Just a few carefully chosen ingredients. And a recipe that in Pistoia means much more than a simple biscuit could ever tell.
This is how the Pippo is born: from genuine shortcrust pastry, handmade in our workshop, and from that round shape that has accompanied the San Bartolomeo tradition for generations.
We chose to make it all year round.
Because some traditions are simply too good to last only a few days.

Ai bambini che oggi scoprono questa festa per la prima volta.
Ai genitori che la fanno conoscere ai propri figli.
Ai nonni che, guardandoli, tornano per un attimo bambini anche loro.

È per questo che amiamo così tanto il 24 agosto: perché ci ricorda che una tradizione resta viva quando continua a essere condivisa.

Oggi prepariamo insieme l’ordine di zia Anna. 🤍
Si scelgono i Pippi, si sistemano con cura, si chiude il pacchetto. Gesti semplici, ma quando dentro una scatola c’è una tradizione, ogni dettaglio conta.
Ci piace immaginare dove andranno i nostri Pippi: su una tavola apparecchiata per tutta la famiglia, nelle mani di un nipote, a casa di qualcuno che vive lontano da Pistoia ma non ha mai dimenticato il sapore di San Bartolomeo.
Perché ogni ordine che esce dalla Bottega porta con sé un pezzetto della nostra città.

Today, we’re preparing Aunt Anna’s order together. 🤍
We choose the Pippi, arrange them carefully and wrap the package. Simple gestures, but when a box holds a tradition, every detail matters.
We like to imagine where our Pippi will go: onto a table set for the whole family, into the hands of a grandchild, or to the home of someone who lives far from Pistoia but has never forgotten the taste of San Bartolomeo.
Because every order that leaves our Bottega carries a little piece of our city with it.

In laboratorio le stiamo preparando una ad una, come vuole la tradizione.
Pippi di pasta frolla, il medaglione centrale, i confetti forati: piccoli elementi
che insieme danno vita a uno dei simboli più amati della nostra città.

Perché a Pistoia la Corona non è soltanto un dolce.
È un ricordo d’infanzia, un gesto che passa dai nonni ai genitori e dai
genitori ai bambini. È il nostro piccolo amuleto pistoiese.

In our workshop, we are preparing them one by one, just as tradition calls for.

Shortcrust Pippi, the central medallion and the traditional ring-shaped sugared almonds: small details that come together to create one of Pistoia’s most beloved symbols.

A Pistoia ci sono tradizioni che non hanno bisogno di essere annunciate.
Si sentono arrivare. 🤎

San Bartolomeo è una di queste.

È il ricordo di quando eravamo bambini, delle passeggiate in centro, dell’unzione, delle bancarelle e di quella Corona di Pippi che per generazioni ha accompagnato il 24 agosto dei pistoiesi.

Noi la aspettiamo così: con le mani in pasta e il profumo di frolla che riempie la Bottega.

San Bartolomeo sta arrivando. E con lui, un pezzetto della nostra storia.
