Cave Monaja nasce dall'idea di recuperare i vecchi vigneti incolti e abbandonati. Per dare loro una nuova vita e renderli produttivi.

"Cave Monaja" nasce dall'idea di recuperare e valorizzare una vite monumentale nel villaggio abbandonato di Farys, una piccola frazione del Comune di Saint-Denis, ma nel contempo di fare altrettanto per quelle “piccole vigne familiari” in via d’abbandono perché di difficile gestione ed antieconomiche per le grandi aziende. Si è scelto di avvicinarsi con assoluto rispetto a piante con una simile storia, prediligendo un approccio del tutto ecosostenibile, al fine di preservare il paesaggio e l'ambiente in cui si vive. L'ultimo passo in avanti nella direzione del rispetto della vite, ambiente e vita, è l'avvio di un percorso di certificazione come prima azienda valdostana a volersi certificare con i criteri del Ministero della Transizione Ecologica (MITE), il "Certificato VIVA" della sostenibilità ambientale. "Mi piace pensare che questa scelta di mantenere vivo il territorio, valorizzando un prodotto che fa parte del tessuto sociale, sia il mio piccolo contributo per rendere migliore il nostro domani"

"Cave Monaja" was born from the idea of recovering and enhancing a monumental vine in the abandoned village of Farys, a small hamlet of the Saint-Denis Commune, but at the same time doing the same for those "small family vineyards" being abandoned because difficult to manage and uneconomic for large companies. It has been chosen to approach with full respect to these plants with a similar story, preferring a completely ecologically sustainable approach, in order to preserve the landscape and our living environment. The last step forward in the direction of respecting the vine, environment and life, is the start of a certification process as the first company from the Aosta Valley to want to be certified with the criteria of the Ministry of Ecological Transition (MITE), the "VIVA Certificate" of environmental sustainability. "I like to think that this choice to keep alive the territory, enhancing a product that is part of the social fabric, is my small contribution to make ours better tomorrow"

A settembre si apre la vendemmia 🍇

Iniziamo con la raccolta delle uve bianche, nel loro momento di massima espressione: Malvoisie de Nus, Muscat Petit Grain e Chardonnay. Profumi intensi, freschezza e acidità perfettamente equilibrata.

Poi si passa ai rossi, che richiedono più attesa e maturazione: Petit Rouge, Fumin e le altre varietà autoctone, ricche di struttura, colore e complessità.

Un lavoro di precisione, lettura del vigneto e rispetto dei tempi della natura, dove ogni grappolo racconta la sua identità 🌿

Secondo uno studio che verrà presentato all’Annual Scientific Session dell’American College of Cardiology il 28 marzo a New Orleans, chi beve vino con moderazione ha un rischio di mortalità significativamente più basso rispetto ai non bevitori e a chi preferisce birra, sidro o superalcolici. 🩺

Lo studio, condotto su oltre 340.000 adulti britannici, evidenzia che, oltre alla quantità, anche la tipologia di bevanda gioca un ruolo fondamentale. Il vino rosso, ricco di polifenoli e composti antiossidanti, riduce il rischio di mortalità cardiovascolare del 21%. L’invaiatura è un momento cruciale nella vita della vite, segnando l’inizio della maturazione delle uve.
🍇 Durante questa fase, gli acini cambiano colore: le varietà rosse passano dal verde al rosso/blue, mentre quelle bianche diventano gialle.

Questo cambiamento è dovuto alla degradazione della clorofilla e alla sintesi di antociani nelle uve rosse e flavonoidi per le uve a bacca bianca. 🔴⚪

Dal punto di vista fisiologico, inizia l’accumulo di zuccheri e la riduzione degli acidi organici, preparandosi per lo sviluppo del profilo aromatico. 🌿
