Palestinian Maqluba — المقلوبة
Its name literally means “the upside-down one.”

A pot is built in layers: rice, vegetables, spices, and traditionally meat, then cooked slowly and flipped onto the table in one dramatic moment.

But Maqluba is more than the flip. In Palestinian homes, it is a dish of gathering — something placed in the middle of the table and shared by everyone. It carries the feeling of family, hospitality, memory, and home.

For this version, the Maqluba became part of the performance: one pot, one flip, one table, many people watching together.

Palestine, served upside down — but still standing. 🇵🇸
