Ogni vigna, ogni paesaggio, ogni luogo della memoria è parte di questo patrimonio e proteggere l'ambiente significa proteggere questo intreccio: natura, cultura, tradizione.

In questo video è Marina Bertagnin, MABE, a raccontare la sua esperienza in Biscardo for Arts, vissuta negli spazi di Santa Marta dell’Università di Verona, un luogo dove storia, ricerca e trasformazione convivono.

L’oro delle nostre colline al mattino.
Paglierino profondo, verde che affiora.
Vetro attraversato dalla luce, riflessi su superficie lucida.
Fiori bianchi su carta ruvida. Polpa gialla, succosa, pesca e albicocca.
Gocce fredde sul calice. Condensa.
Tra i filari: terra asciutta, pietra chiara, foglie spesse.
Aria sottile che muove l’erba.
Minerale. Traccia salina su pietra.

Tenere il calice dallo stelo non è solo una questione di eleganza: è un gesto che protegge l'integrità del vino. Afferrare il bicchiere dalla coppa significa trasmettere il calore della mano al vino, alterandone la temperatura ideale e interferire con i profumi delicati che salgono verso il naso.

Consiglio del sommelier
Degusta il vino tenendo sempre il calice dallo stelo, tra pollice e indice, mantenendo le altre dita come sostegno leggero. Questo gesto preserva la temperatura corretta del vino, evita di lasciare impronte sulla coppa che ostacolerebbero l'osservazione visiva, e permette ai profumi di esprimersi liberamente senza essere contaminati dall'odore della pelle.
Degustare è un'arte fatta di attenzione, gesto e rispetto.

Holding the glass by the stem isn't just a matter of elegance: it's a gesture that protects the wine's integrity. Grasping the glass by the bowl means transferring the warmth of your hand to the wine, altering its ideal temperature and interfering with the delicate aromas rising toward your nose.

Sommelier's tip
Taste wine by always holding the glass by the stem, between thumb and index finger, keeping the other fingers as light support. This gesture preserves the wine's correct temperature, avoids leaving fingerprints on the bowl that would obstruct visual observation, and allows the aromas to express themselves freely without being contaminated by the scent of your skin.
