Prosciutto di San Daniele - En Welcome to Prosciutto Di San Daniele's official page for the UK. San Daniele. A town. A prosciutto. A tradition.

Prosciutto di San Daniele is produced only with pigs born and bred in Italy, created from pork, sea salt and nothing else. Air cured by the fresh, clean winds coming down from the Alps that meet the warmer air coming in from the Adriatic Sea, we benefit from nature’s own ventilation in our unique micro-climate. Prosciutto-making know-how has been handed down for centuries in our town of San Daniel

e del Friuli, in the north-east corner of Italy. To bear the San Daniele mark, the prosciutto must originate in San Daniele, a process that allows us our valued PDO (Protected Designation of Origin) status. We believe that you can’t rush perfection, which is why the maturing process has to last for a minimum of 13 months. Pinker in colour and less salty than other prosciutto, Prosciutto di San Daniele has a delicate and well-balanced flavour. Or you can simply say, as we do in Italy, ‘delizioso’! An unbreakable link forged between products and land.

San Daniele del Friuli has a unique microclimate: here, the cold, dry air from the Carnic Pre Alps, the mild, humid wind rising from the Adriatic Sea, and the River Tagliamento, all come together to create the perfect conditions for curing.

Discover why Prosciutto di San Daniele PDO originates in San Daniele del Friuli: a unique combination of local area, microclimate, soil and tradition.

How many times have you seen someone trim the fat off a slice of Prosciutto di San Daniele before eating it?

People do it all the time, but it’s worth understanding what they’re actually missing out on...

The visible fat in San Daniele PDO is mainly composed of unsaturated fatty acids, which are highly digestible and beneficial to the body.

One of these fatty acids, oleic acid—the same found in extra virgin olive oil—plays a key role in maintaining balanced cholesterol levels. The fat also contains Omega 3 and Omega 6; these are essential fats that the body cannot produce on its own and they play an important role in the nervous system and cardiovascular health.

From a sensory perspective, fat is what makes every slice melt in the mouth and taste naturally sweet. Without it, the flavour profile is weakened and the texture changes dramatically.

Should the fat on Prosciutto di San Daniele be removed or left on? Find out why fat is essential for the flavour, aroma and nutritional value of the slice.
