In Soave, autumn is when the next vintage quietly begins, and our w**emakers are already back in the vineyards caring for the soil that gives Soave its character. ✨ After harvest, the soil is worked and enriched with organic matter, which feeds its microbial life, improves its structure and helps it hold water. Then come the autumn rains, helping the soil break down that organic matter and refill its water reserves before the vines go dormant for winter. This care for the land, passed down through generations of growers, is part of what earned Soave’s traditional vineyards recognition from the FAO as a Globally Important Agricultural Heritage System in 2018. Healthy soil today, great Soave tomorrow.
