Piccole cassette per la raccolta, pigiatura delicata e forza di gravità: nella nostra nuova cantina di vinificazione possiamo lavorare le uve con la massima cura.

Peter svuota le cassette, mentre Florian riempie la pressa, che si trova proprio sotto la tramoggia. Tutto studiato e realizzato per sfruttare la gravità naturale, che permette alle uve di seguire un percorso il più breve e delicato possibile.

Peter leert die Kisten, Florian füllt die direkt darunterliegende Presse. Jeder Schritt ist darauf ausgelegt, die natürliche Schwerkraft zu nutzen und den Trauben einen möglichst kurzen und schonenden Weg zu ermöglichen.

Uno Chardonnay alpino, nato sulle pendici della Mendola, oggi è stato riconosciuto come il Miglior Chardonnay d’Italia.

Troy 2023 ha ricevuto questo importante riconoscimento nella Guida Essenziale ai Vini d’Italia 2027 di DoctorWine: 98/100 punti e il Doppio Faccino, assegnati dai degustatori della guida diretta da Daniele Cernilli.

È un riconoscimento che ci riempie di orgoglio e che racconta bene il progetto da cui Troy è nato: dare voce, attraverso una varietà internazionale, all’identità della nostra terra alpina.

Troy cresce in località Sella, sul versante orientale del massiccio della Mendola, tra i 500 e i 550 metri di altitudine. Un paesaggio fatto di altitudine, esposizione e clima che rappresenta l’anima più profonda di questo vino.

Questo riconoscimento lo dedichiamo alle nostre famiglie di viticoltori e a tutte le persone che, ogni giorno, con dedizione, consapevolezza e passione, contribuiscono a questo progetto. Insieme, puntiamo sempre più in alto.

Ein alpiner Chardonnay, gewachsen an den Hängen der Mendel, wurde heute zum besten Chardonnay Italiens gekürt.
Troy 2023 erhält diese besondere Auszeichnung im Guida Essenziale ai Vini d’Italia 2027 von DoctorWine: 98 von 100 Punkten und den „Doppio Faccino“, vergeben von den Verkostern des von Daniele Cernilli geleiteten Weinführers.
Diese Auszeichnung erfüllt uns mit Stolz und erzählt zugleich viel über das Projekt hinter Troy: mit einer international renommierten Rebsorte die Identität unserer alpinen Heimat zum Ausdruck zu bringen.
Troy wächst in der Lage Söll am Osthang des Mendelmassivs auf 500 bis 550 Metern Höhe. Diese Landschaft, geprägt von Höhenlage, Exposition und Klima, ist die wahre Seele dieses Weines.
Diese Auszeichnung widmen wir unseren Winzerfamilien und allen Menschen, die Tag für Tag mit Hingabe, Sorgfalt und Leidenschaft zu diesem Projekt beitragen. Gemeinsam wollen wir immer höher hinaus.

An Alpine Chardonnay grown on the slopes of Mount Mendola has been named the Best Chardonnay in Italy.

Troy 2023 earned this major recognition in the 2027 Guida Essenziale ai Vini d’Italia by DoctorWine, scoring 98/100 points and receiving the Doppio Faccino award from Daniele Cernilli's tasting team.

This achievement fills us with pride and reflects the core vision behind Troy: capturing the identity of our Alpine terroir through an international grape variety.

Troy is cultivated in Sella, on the eastern slopes of the Mendola massif, between 500 and 550 meters above sea level. This unique combination of elevation, exposure, and climate defines the true soul of the wine.

La vendemmia prosegue, un passo alla volta.

Parcella dopo parcella, monitoriamo l’evoluzione delle uve. Quando raggiungono il grado di maturazione ideale, il nostro team tecnico enologico stabilisce il momento ideale della raccolta, così le nostre famiglie viticoltrici possono intervenire con rapidità e flessibilità.

I loro vigneti sono infatti di ridotte dimensione e quindi possono essere vendemmiati generalmente nell’arco di poche ore.

In questo modo ogni parcella può essere raccolta esattamente al momento giusto.

Parzelle für Parzelle wird die Entwicklung der Trauben beobachtet. Sobald die ideale Reife erreicht ist, gibt unser weintechnisches Team den Erntezeitpunkt vor – und unsere Weinbauernfamilien können rasch und flexibel reagieren.
Denn sie bewirtschaften kleine, überschaubare Flächen, die in der Regel innerhalb weniger Stunden gelesen sind.
So kann jede Parzelle genau zum richtigen Zeitpunkt geerntet werden.

Parcel by parcel, we monitor the grapes' evolution. Once they reach ideal maturity, our technical winemaking team determines the exact moment for harvest, allowing our winegrowing families to act with speed and flexibility.

Because their vineyards are small, they can generally be harvested in just a few hours.

This allows every single plot to be picked precisely when the time is right.

Dopo le fresche notti degli ultimi giorni, abbiamo iniziato la vendemmia con le prime uve Chardonnay dalle zone che raggiungono la maturazione per prime.

Il germogliamento anticipato e le temperature elevate durante le giornate delle ultime settimane hanno portato a una maturazione più rapida del solito. Le uve si presentano sane, con un ottimo equilibrio tra zuccheri e acidità e prospettive qualitative molto positive.

Ora siamo pronti a seguire con grande attenzione ogni microzona e ogni parcella, vendemmiando ciascun vigneto nel momento ideale, per valorizzare al meglio le caratteristiche e l’identità del nostro territorio.

Nach den kühlen Nächten der vergangenen Tage beginnt die Weinlese: Wir starten mit den ersten Chardonnay-Trauben in den früh reifenden Lagen.
Der frühe Austrieb im Frühjahr und die hohen Tagestemperaturen der vergangenen Wochen haben zu einer schnelleren Reifeentwicklung als üblich geführt. Die Trauben präsentieren sich gesund, mit einem sehr guten Gleichgewicht zwischen Zucker und Säure. Die ersten Eindrücke stimmen uns sehr zuversichtlich.
Nun gilt es, jede Mikrozone und jede Parzelle aufmerksam zu begleiten und jeden Weinberg zum idealen Zeitpunkt zu lesen – um die besonderen Eigenschaften und die Identität unseres Gebiets bestmöglich zur Geltung zu bringen.

Following the cool nights of recent days, we have begun harvest with our first Chardonnay grapes from the earliest-ripening plots.

Early budding and high daytime temperatures over the past few weeks led to faster ripening than usual. The grapes are remarkably healthy, with an excellent balance between sugars and acidity and very positive quality prospects.

We are now ready to closely monitor every micro-zone and parcel, harvesting each vineyard at its ideal moment to fully highlight the distinct characteristics and identity of our terroir.

Circa 500 soci, collaboratori e ospiti d'onore hanno celebrato la benedizione del nuovo edificio officiata da don Matthias Wünsche. La nuova area di produzione crea le condizioni ideali per una lavorazione delle uve ancora più delicata, flessibile e precisa, ponendo le basi per una qualità enologica ai massimi livelli. Con la nuova struttura siamo pronti ad affrontare al meglio la prossima vendemmia e compiamo un ulteriore importante passo nel continuo sviluppo della qualità dei nostri vini.

Rund 500 Mitglieder, Mitarbeiter und Ehrengäste feierten die Segnung des neuen Gebäudes durch Pfarrer Matthias Wünsche. Die neue Produktionshalle schafft die Voraussetzungen für eine noch schonendere, flexiblere und präzisere Verarbeitung der Trauben – die Grundlage für höchste Weinqualität. Mit dem Neubau sind wir für die kommende Ernte optimal aufgestellt und setzen einen weiteren wichtigen Schritt für die kontinuierliche Weiterentwicklung unserer Weinqualität.

Per secoli i monasteri sono stati luoghi in cui il sapere veniva raccolto, custodito e tramandato. A Termeno i Servi di Maria furono importanti custodi di questa tradizione.

Il nome Servorum Mariae è molto più di un richiamo a questa storia. Esprime una convinzione: i grandi vini non nascono soltanto dalla loro origine, ma dalla capacità di comprenderla.

La comprensione nasce là dove le osservazioni vengono raccolte, le conoscenze condivise e il sapere continuamente ampliato. Ciò che un tempo veniva custodito nei monasteri, oggi appartiene al modo di intendere il nostro lavoro in Cantina.

Servorum Mariae è l'espressione di questa comprensione: un vino ottenuto prevalentemente da uve Merlot, nato da decenni di osservazione, conoscenze tramandate e costante evoluzione.

Klöster waren über Jahrhunderte Orte, an denen Wissen gesammelt, bewahrt und weitergegeben wurde. In Tramin waren die Serviten wichtige Träger dieser Tradition.

Der Name Servorum Mariae ist mehr als ein Verweis auf diese Geschichte. Er steht für eine Überzeugung: Große Weine entstehen nicht allein aus ihrer Herkunft, sondern aus dem Verständnis für sie.

Verständnis entsteht dort, wo Beobachtungen gesammelt, Erkenntnisse weitergegeben und Wissen laufend erweitert werden. Was einst in den Klöstern gepflegt wurde, gehört heute zum Selbstverständnis unserer Genossenschaft.

Servorum Mariae ist Ausdruck dieses Verständnisses – ein Wein aus vorwiegend Merlot-Trauben, entstanden aus Jahrzehnten der Beobachtung, weitergegebenen Erkenntnissen und konsequenter Weiterentwicklung.
