Making a perfect, creamy risotto is a rewarding process that relies on patience and quality ingredients. Here is a simple, step-by-step guide to help you master this Italian classic at home.
Prep the stock: Bring your vegetable or chicken broth to a gentle simmer in a separate pot and keep it warm on low heat throughout the process.
Sauté the aromatics: In a heavy-bottomed pan, heat butter and olive oil, then sauté finely chopped onions (or shallots) until soft and translucent—do not let them brown.
Toast the rice: Stir in the Arborio rice, increasing the heat slightly to toast it for about 2–3 minutes until the edges of the grains become translucent.
Deglaze with wine: Pour in a splash of dry white wine and stir continuously until the liquid is almost entirely absorbed by the rice.
Add broth gradually: Add the warm stock one ladle at a time, stirring constantly and allowing each ladle to be absorbed before adding the next; this releases the rice’s starch for a natural creaminess.
Finish perfectly: Once the rice is al dente, remove it from the heat and stir in a k**b of cold butter and freshly grated Parmesan cheese for a silky, rich finish.
Serve immediately while warm to enjoy that signature all’onda (wavy) texture. If you want to elevate the dish, consider adding sautéed mushrooms or fresh herbs like thyme toward the end of the cooking process.
