The full KUYAH NYC menu has officially landed, and choosing a favourite before September 24 might be impossible.

From Blue Mountain Coffee rubbed short rib and escoveitch lobster to braised oxtail with cheddar polenta, pepper shrimp with ackee and saltfish, jerk chicken sliders, spicy tuna, pork belly, red snapper tacos and plenty more.

Chef India Doris is coming with crispy pork belly dressed in sweet jerk spices and scallion relish, a bright Sungold salad with pickled mango and tamarind, then closing the argument with braised oxtail, cheddar polenta and Scotch bonnet oil.

Pulled jerk chicken sliders with jerk BBQ sauce. Jonkanoo red snapper open-faced tacos with mango pico de gallo. Then callaloo and veggie curry Ital stew with cassava fries.

Short rib smoked and tucked into coco bread with jerk BBQ sauce. Oysters with callaloo, duck bacon and Scotch bonnet butter. Lobster on smashed plantain with sweet chilli aioli.

Read that menu again. Slowly. 😮‍💨

Chef Scottley Innis understood the assignment and then carried it somewhere else entirely.
