Eye of the Rib at Tajimaya, Shinsaibashi 🥩🔥
About 150g for 5,200 yen, and honestly, it was one of those simple, satisfying bites. Clean fat, great texture, and that deep Tajima flavor that stays with you.
What makes Tajimaya different is the aging. They buy whole Japanese Black cows and dry age them in their own chamber for more than 45 days, with the temperature and humidity carefully controlled the whole time. The aging doesn’t just soften the meat, it builds flavor and brings out the sweetness in the fat. Because they take the whole cow, you also get access to a much wider range of cuts than a normal yakiniku place can offer.
I really liked their grill setup too. Thick custom cast iron plates that hold steady heat, and a smokeless roaster they developed themselves to keep airflow controlled and the meat cooking evenly without rushing it. You can feel how much control you have over the sear and the timing.
Tajimaya works only with the Tajima bloodline, the genetics that sit at the base of all Japanese Wagyu. Famous names like Kobe and Sendai beef come from this same lineage. Narrowing the focus this way lets them really understand how each cut behaves on the grill. The whole place is private rooms too, so even in the middle of Shinsaibashi it feels calm and unhurried.
