"Sake brewing continues until it reaches the customer."
This man holding the heavy P-bako (plastic crate) is Takehiro, the Toji’s older brother.
He rushes around daily with a crucial mission: safely delivering the sake, filled with our brewers' passion, in its absolute best condition.
The evolution of Japan’s sake culture is a history of delivery.
In the Edo period, fast ships called taru-kaisen (barrel cargo ships) braved rough seas to transport premium sake from Kamigata (Kansai) to Edo (Tokyo)—a life-risking, grand delivery project.
This delicious sake was called kudarizake ("sent-down sake") and caused a massive boom. (It’s even said to be the origin of the word "kudanarai," meaning worthless, referring to things not worth sending to Edo).
Meanwhile, shop apprentices clutched reusable bottles called kayoi-dokkuri, sprinting to deliver fresh sake the moment an order came in.
No matter how masterfully sake is crafted, it means nothing if the bottle breaks during the "last mile" or if rough handling spoils the flavor.
Historically, the delivery person has been just as vital a protagonist as the brewer in protecting the sake's value (just to put a little pressure on Takehiro!).
If you see him sweating and carrying crates around town, please give him a warm "Otsukaresama!"
We truly appreciate your continued support.
