Tea Stories — Temomi 🍃
During our tea school weeks in Kyoto, we learned about Temomi (手もみ), the traditional art of hand-rolling Japanese green tea.
Today, most Japanese tea is processed using machines, making traditional hand-rolling an extremely rare craft.
And one important distinction: matcha is never rolled. Temomi is used for traditionally hand-rolled green teas, such as Sencha.
This craft behind Japanese tea is a rare tradition, still kept alive by hand. 🤍
