変わらぬ伝説を紡ぐヴーヴレイの名門、ドメーヌ・ユエ。
1928年の創業以来、ヴーヴレイを代表する生産者としてその名を刻み続けるドメーヌ・ユエ。フランスワイン評価誌『レ・メイユール・ヴァン・ド・フランス』では最高評価の★★★を獲得し、ロワールのみならず、フランスを代表する白ワインの名門として高く評価されています。
ユエの特徴は、100年以上使い続ける古樽と野生酵母による極めて自然なワイン造り。セック（辛口）からドゥミ・セック（中甘口）、モワルー（甘口）まで、基本的な醸造方法はすべて同じです。ワインのスタイルを決めるのは造り手ではなく、その年の自然環境と酵母の働き。人の手による介入を極力排し、テロワールとヴィンテージをありのままに表現しています。
また、ニコラ・ジョリーらと並び、ロワールにおけるビオディナミ農法の先駆者としても知られています。1990年から本格的にビオディナミを導入し、除草剤や化学薬品を排除。健全で力強いブドウから生まれるワインは、透明感とエネルギーに満ちています。
 
Le Haut-Lieu（ル・オー・リュー）
ドメーヌ・ユエが1928年の創業時に取得した、最も歴史ある畑。南向きの斜面に広がり、30cm以上の厚い粘土質土壌と石灰岩盤を特徴とします。
小石やシリカをほとんど含まないため、「ル・モン」と比べると若いうちから華やかに開きやすく、豊かな果実味が魅力。白桃や熟した果実を思わせるアロマと、厚みのある味わい、どっしりとした骨格を備えています。
栽培・醸造は他の畑と同様でありながら、テロワールの個性が最も素直に表現された一本。若いうちから楽しめる親しみやすさと、熟成によるさらなる奥行きを兼ね備えています。

Domaine Huet, the timeless legend of Vouvray.

Since its founding in 1928, Domaine Huet has remained one of the benchmark producers of Vouvray. Awarded the highest distinction of ★★★ by Les Meilleurs Vins de France, the estate is regarded not only as one of the Loire Valley's great names, but also as one of the finest white w**e producers in all of France.

A hallmark of Huet is its remarkably natural approach to w**emaking. Fermentation and aging take place in century-old barrels using only indigenous yeasts. Whether producing Sec (dry), Demi-Sec (off-dry), or Moelleux (sweet) w**es, the vinification remains essentially the same. The final style is determined not by the w**emaker, but by nature itself, through the vintage conditions and the activity of native yeasts. Minimal intervention allows each w**e to express its terroir and vintage with complete authenticity.

Alongside pioneers such as Nicolas Joly, Domaine Huet is also recognized as one of the leading figures in introducing and establishing biodynamic viticulture in the Loire Valley. Biodynamic farming was fully adopted in 1990, eliminating herbicides and synthetic chemicals from the vineyards.

いつもルグランをご愛顧いただき、誠にありがとうございます。
本日は、皆様に大切なご報告と、今後の営業スケジュールについてお知らせいたします。
 
1. シェフ退職に伴う通常メニュー提供の終了（5月末まで）
これまで当店の厨房を支えてくれたシェフ「鈴木」が、次なる挑戦へ進むため、2026年6月をもちまして退職することとなりました。
これに伴い、現在の通常メニューによるお料理の提供は【5月31日（日）】が最終日となります。
直前のご連絡となり、誠に申し訳ございません。
 
 
2. 6月営業について
通常メニューは5月で一区切りとなり、6月以降は2枚目の画像のような簡易メニューとなります。

しかし、6月開催の以下のイベント限定でシェフのお料理を提供いたします。
