Having an uncompromising, exhaustive devotion to one’s selected expertise—some might say insane—pursuit of the crème de la crème, the ultimate in green tea harvesting, manufacturing and shipping, isn't unusual in Japan. In fact, the Japanese culture is the embodiment of perfection “KODAWARI” a passion for quality and excellence. As a result of this “Kodawari Culture”, Japan has become the preferred choice in high quality authentic green tea. We are setting the example; our motto, “committed to consumer distinction and mental satisfaction.” This distinction starts in the cultivation process; using only the finest and youngest shade-grown tea leaves, harvested with special care only once a year in the spring. First harvest leaves are richer in polyphenols, vitamins, minerals, fibers, chlorophyll and L-Theanine resulting in a sweet, delicately smooth flavor and vivid green color. After the green tea leaves have been carefully plucked by hand, oxidization and fermentation starts, the preservation process has to be done immediately: the leaves are steamed to stop fermentation, preserving all the nutrient-rich value, color and fresh taste. Then the leaves are slowly dried, broken down and cut. The purpose is to sort out all stems, twigs and unwanted parts until the finest and purest leaves remains –these leaves are called ‘Tencha’. The Tencha superfine tea leaves are slowly ground, by stone mills, into an ultra fine green tea powder called matcha. This slow grounding by a stone mill avoids friction and heat, which can cause the deterioration of its taste, color and nutritional value. One stone mill produces only about 30g of matcha per hour. Our “Kodawari Spirit” does stop there, our flexible packaging is worthy of merit; using unique cutting edge technology, water-based printing which is cleaner, environmentally friendly and produces a beautiful finished product. Water-based printing is next generation technology (although petroleum based printing is the most popular) to solve problems of conventional oil-based printing. The water-based ink is made mainly from water and alcohol instead of using conventional oil and organic solvent. Rest assured the processes in place by our team are ISO 9001 complaint, accredited organic by OCIA Japan and they are USDA Organic and Kosher certified.
