My lamb “pastrami” project turned out delicious. After the cure/brine, it was smoked over hickory for 7 hours then steamed.🙌

Tsūfū diet✊

Just received a few hundred delicious oysters. I love them neat so you can taste where they are from and we’ll make a little caviar mignonette for the hell of it.

Smokey chocolate fudge brownies.
A customer at the restaurant wanted to eat some brownies and we had a bit of fun trying a few different recipes. I found these 2 from some old notes and gave them a whirl. Recipe 2 was my favorite and it’s also good to play around to understand the parameters influencing gooey v cakey. Basically flour and sugar, and to some extent eggs, provide structure. Fat, butter chocolate (and eggs) give extra gooey factor and baking powder, flour and duration in the oven add to the cakey texture. Both of these recipes lean towards the gooey texture and are extremely delicious.

Stinky tofu!
I checked out the Taiwan food wagons currently residing at Tokyo tower and it’s worth a trip if you happen to be close by. Maybe not for the fermented tofu or Taiwan beer however coriander dumplings, beef noodles and delicious Gia Bao are to be had.

Cross-cultural smoked salmon!
1. Clean salmon filet.
2. Brush on shio koji, sugar, lemon juice herbs.
3. Wrap& refrigerate overnight.
4. Wipe off rub and set in fridge uncovered for 24 hours to form pellicle.
5. Smoke with oak wood, brushing a few times with maple/rye mix until done.
5. Eat!

Midnight wagyu!
Took a wee climb in Nagano up to Honzawa onsen, the highest hot spring in Japan at 2150M. In the freezing foothills before camp we grilled 2 big-ass steaks. Insanely delicious treat.

Faster to make this than go out and order.
Chicken marinated in tom yum then baked. Caramelized onions added to red curry paste, coconut milk, galangal, spice, lemongrass etc.
