Japanese sake enters the world of ARMANI.

We’re honored to share that our KODAKARA Yuzu and selected sake were featured at a special invitation-only event,
“SAKE EXPERIENCE,” held at the EMPORIO ARMANI flagship store in Milan.

Guests enjoyed exclusive pairings created by Armani’s in-house chefs, and the response was truly exceptional.
It’s a privilege to see Japanese sake culture connect with Italy’s luxury and fashion scene.

This collaboration is just the beginning.
A new story will unfold in the next city — stay tuned!

TATENOKAWA MUGA — Capturing the Moment of Freshness

To pursue ultimate freshness, we arrived at one place:
the moment sake flows directly from the press.

At the funaguchi — where freshly pressed sake drips quietly, still alive with gas and energy —
this experience is usually reserved only for brewers.

With the MUGA series, we sought to deliver that moment as it is.
No adjustment. No unnecessary contact with air.
Bottled immediately using a special method to preserve freshness and natural liveliness.

This pursuit of pure expression gave rise to the philosophy of six “Mu” —
a sake born from devotion, focus, and an almost instinctive pursuit of freshness.

MUGA is a winter-only series, available in limited regions.
Platinum and Green are now released.
Red and Gold will follow after the New Year.

We invite you to experience sake made in a state of Muga —
crafted with single-minded passion, and enjoyed in the moment. 🍶

Introducing KYOKUGEN “ULTRA” — the pinnacle of our Junmai Daiginjo brewing.
Crafted from 100% Yamada Nishiki polished to 8% over nearly 40 days, this sake reflects extreme precision and quiet elegance.

Brewed in our state-of-the-art facility, the moromi is controlled to 0.1°C, resulting in a purer aroma, sharper definition, and a beautifully fresh finish.

The label is made with Miyama Washi, a traditional craft paper from Yamagata, paired with a new premium white carton for a modern, refined presentation.

A sake made for special moments —
to share with the people who matter most this holiday season.

KYOKUGEN ULTRA — where purity meets depth.

The Land Behind Our Sake

TATENOKAWA is brewed in Shonai, a quiet region in northern Yamagata, facing the Sea of Japan.
Our home, Sakata City, is a place where nature, craftsmanship, and history shape the spirit of our brewery.

Here, the winters are long and cold.
The summers are bright and lush.
Pure mountain water flows from Mt. Chōkai, and vast rice fields stretch across the valley.

These elements create the ideal environment for brewing sake —
and they inspire the clarity, softness, and depth found in every bottle of TATENOKAWA.

Shonai is not just our location.
It is the backbone of our craft.
The people, the landscape, the climate — all are woven into the sake we make.

If you ever visit Japan, we hope you’ll come to Sakata and experience the quiet beauty of Shonai for yourself.

Soubei Wase — a forgotten Shonai rice brought back to life.

In the Shonai region, farmers once led their own rice-breeding innovations—a level of local craftsmanship rarely seen today.
Among the varieties born from their hands was Soubei Wase,
an heirloom strain selected long ago from Kamenoo.

Only 1.9 kg of seed remained.
In 2018, together with local growers, we began the revival.
Its tall, delicate stalks made cultivation extremely difficult—
a reminder of why modern varieties replaced it.
Yet this challenge is precisely what gives the rice its character and depth.

Today, Soubei Wase stands not only as a sake rice,
but as a living testament to the heritage of Shonai’s farmers and their quiet ingenuity.

Winter brings depth — richer aroma, stronger umami, and dishes that truly shine with the right sake. ❄️🍶

Across global kitchens, chefs are now designing their holiday courses.
And the pairings that stay in guests’ memories are those where food and sake meet with intention and elegance.

That is where TATENOKAWA excels.

Here are three winter pairings to elevate your course:

🦪 Oysters Two Ways × SEIRYU
Crisp acidity lifts briny sweetness for a clean, vibrant start.

🥢 Chutoro & Sea Bream Nigiri × KYURYU
Semi-dry balance refreshes fatty tuna and highlights sea bream’s sweetness.

🍲 Daikon Steak & Foie Gras × EIGHTEEN
EIGHTEEN softens richness and amplifies dashi-driven umami.

Plan your winter course with TATENOKAWA🍶

The Heart of Sake — Koji Making

Before fermentation, before aroma,
before a single drop of sake is born—
there is koji.

In a warm, carefully controlled room,
steamed rice is sprinkled with koji spores and guided by hand
through hours of quiet attention.

Temperature, moisture, texture, aroma—
every detail is shaped by the brewer’s intuition.

Koji transforms rice into sweetness, depth, and life.
It is the silent catalyst behind every Junmai Daiginjo we craft. ✨🍚
