Murashige Shuzo sake brewery in Iwakuni, Yamaguchi has the biggest sugidama in Japan, and probably in the world. This cedar ball has a metal frame inside rather than the usual wickerwork. Everyone who visited the brewery this time was beguiled by their 80% polished junmai.

Matsuo Shrine in Kyoto city is sacred to sake and brewing. It’s said that if you brew sake with even a tiny amount of the spring water that emerges at the shrine, nothing will go wrong with your brewing. The main shrine building itself takes a unique architectural style. There’s a little museum of sake brewing within the precincts.

Takeuchi Shuzo sake brewery in Hofu, Yamaguchi makes sake the traditional way, using locally grown rice. The wooden brewery building, unchanged since the Meiji period is home to yeasts that impart an elegant aroma and sourness to the sake that can’t be replicated elsewhere. The Takeuchi brothers work with a small, dedicated team to produce their carefully crafted sake in small batches.

I bought this Ayakiku sake at the souvenir shop at Ritsurin Garden In Takamatsu. It’s a tokubetsu junmai, namachozo, genshu. As such, it’s a sweet and lush sake with a little natural fizz. It went very well with a large bowl of locally grown strawberries.

Kawatsuru Junmai Ginjo. The labels say ‘traditional winter production’, ‘carefully selected by the brewery’, and ‘limited edition’. I don’t know what any of this means, but it’s a very drinkable, slightly pétillant Shikoku sake that you can find in local supermarkets.

Karakuchi Junmai Hachiju sake from Eikoh of Matsuyama. The rice is polished very little to only 80%, and Matsuyama Mii is a very savoury type, so this sake has a distinctive rich and earthy flavour. It’s also unpasteurised and unfiltered, giving it a hefty presence. In short, it’s a very satisfying junmai.
