Chef Raphael’s Wine Tips: The White Wine Mistake 🥂

Are you serving your white wine straight out of a freezing fridge? If so, you might be missing out on all the flavor!
While we love a refreshing, cold drink, over-chilling white wine completely numbs its aromas and complex flavors. If it's too cold, all you will taste is acidity.

The Chef’s Trick: Take your white wine out of the fridge about 15–20 minutes before you plan to pour it. As it warms up just a fraction, you’ll suddenly start smelling the beautiful tropical fruits, crisp apple, or floral notes that were locked away by the cold.

Think of it like music. You don’t want a heavy bassline completely drowning out a delicate acoustic guitar. The same goes for your palate!

Earlier this month, I made a video talking about how much mum influenced my journey to becoming a chef. I shared some of the food memories I grew up with and mentioned that she had been unwell, but at the time we were grateful she was still with us.

This past weekend, after a long and difficult battle with brain cancer, our mum passed away peacefully.

It has been an incredibly tough season for our family, especially after losing our dad last year as well. The past two years have tested us deeply. Still, we are grateful we got the opportunity to care for her, stand by her, and share precious moments together until the very end. Now she finally gets to rest.

Mum was strict with us growing up, but that strength, discipline, and guidance shaped us into who we are today. I will deeply miss her advice, her concern, and the way she always checked in especially during difficult times.

As we prepare to give her a decent send off, I humbly ask those who can to keep our family in your prayers. Any support towards the medical bills incurred and funeral expenses will truly mean a lot to us during this time.
