The fruits in season got me curious once more and this is what I made.

1) Pineapple Sweet Chilli.

2) Mango & Pepper BBQ from The Engineer Edition.

3) Tamarillo BBQ Sauce (think of what would happen if HP Sauce and Heinz Ketchup had a sauce baby)

It's amazing how the flavours develop overnight, they mellow and marry and we are able to tell if we got things right.

Dinner is served..

Chicken Liver

The reason why people hate liver is because it's often overcooked and they skip the pre soaking the liver in milk.

Here's how I did mine.

I soaked the liver in milk for like 2hrs.

Drain off the milk and discard.

Season them with salt and pepper and lightly.

Add coriander and cu**in powder and dust them with some flour.

Sautee the liver in a single layer and in batches for 3-5min on each side.

Set aside.

Fry red onions and garlic and rosemary.

Add the liver, green onion and dhania and sautee for like 5min.

Add 1-2T of mango gooseberry, stir through, add some salt and chilli and viola enjoy.

NB:
Always season your ingredients in stages, it makes a world of difference as opposed to when you season just at the end.

If the liver tasted dry and crumbly when you bite into it as opposed to melting in your mouth, you've over cooked it.

This nippy weather had me waking up to thoughts of making soup.

I mean it's lunch time somewhere right?😂

Roasted Pumpkin Soup

Ingredients:

Pumpkin (skin on because no one has time to peel it off)
Cartots
Onions
Garlic
Rosemary
Oregano
Ginger
Nutmeg
Cinnamon
Salt
Pepper
Oil.

Roast the veg in a preheated oven at 210C for 45min or until cooked through.

Scoop out the pumpkin flesh (optional)

Blend the veg in batches, you can add some hot liquid to make blending easier.

Strain the puree and transfer it into a deep sauce pan, add more stock (veg or chicken) if you need to thin out the soup.
Bring to a boil, season to taste.

Add some chilli if you want an extra kick.

Finish it off with coconut cream or double cream or leave it as is.

Serve it with Brioche, Garlic Bread or your favourite bread.
