Tomatoes and eggplants were looking very good at the market, so Eggplant Bear couldn't resist the temptation and bought a lot of them. What to do with them, though? In this video, we'll show you how to put together a very simple, yet delicious vegetarian dish from Southern Italy, which showcases these two delicious ingredients: Pasta with glossy fried eggplants and a classic tomato sauce. If you start with tomato purée, fresh or canned tomatoes, you will have to cook the sauce for about 45 minutes, so it gets nice, think and flavourful. With our ready-made tomato sauce, the dish comes together in less than half an hour, which makes it ideal for a week night when you don't want to do a lot of cooking. Give it a try!
