“2023 was the last vintage Elise vinified from her 4.5 hectares of vines in Les Riceys, parcels she often refers to not as vineyards, but as her gardens. For years, those vines had only been treated with biodynamic preparations. Most people would likely be surprised to learn that Elise never used electrically powered machines in her cellar. Even the biodynamic preparations themselves were dynamized entirely by hand, without mechanical mixers, Elise preferring to plunge her arms directly into the liquid, stirring slowly and deliberately, believing intention itself mattered...”

Ruppert-Leroy: A Deep Dive on Biodynamics & Remarkably Alive 2023s: “With temperatures slowly rising across Champagne, the season had fully awakened by the time we arrived at Ruppert-Leroy. Everything at the domaine seemed in motion; young cows huddled with the larger herd inside the barn, feeding on hay brought in from the surrounding vineyard parcels, the smell of cut grass still fresh in the air. A single pig wandered through the space, insistent and curious, looking for a hand to scratch his snout. Nearby, the horses had just returned from the vines, still carrying the calm rhythm of the fields in their bodies.

Inside the winery, Bénédicte and Manu were already at work preparing biodynamic treatments for the coming season. At Ruppert-Leroy, biodynamics never feels theoretical or aestheticized — it feels deeply physical, agricultural, almost inseparable from the rhythm of daily life itself. Bénédicte and Manu were busy preparing Preparation 500, one of the central treatments in biodynamic farming. In biodynamic philosophy, the cow is seen as a symbol of fertility and life force, and the horn itself — hollow, living, structured — is believed to channel and concentrate these energies.“ To read the rest of Ryan’s (beautifully written!), recap head to the link in our bio.

Heatwave cooldown! The past week has brought 90°F (32°F) temps here in Paris, but there’s really nothing good Champagne can’t fix.

Stéphane Regnault Dorien Grand Cru – 100% Chardonnay from the ‘Hautes-Mottes’ (translates to high mound) vineyard in Le Mesnil, which refers to unusual veins of chalk that extend into the plain. Aged for 3 years, 8 months sur-lie. Fun fact: The numbering of Stéphane’s cuvée names represents the vintage blend — for example, here we have N° 29 , which blends the ‘14 and ‘15 vintages.

Ruppert-Leroy Les Cognaux – 100% biodynamically-farmed Pinot Noir fermented with native yeasts and aged in barrels / demi-muids for nine months before sur-lie aging in bottle for 18-20 months. Disgorged à la volée, and bottled without any liqueur de tirage (Brut Nature) or added SO2. ‘Cognaux’ is an old local word that means ‘little corner,’ as in a nice little corner of the world to grow grapes :)

Etienne Calsac Clos des Maladries – 100% Chardonnay from the Clos des Maladries vineyard (plowed by horse) in the Grand Cru of Avize, which is enclosed in a walled garden behind Etienne’s grandparents’ home. Aged for 36 months under cork stopper. The term ‘Les Maladries’ comes from the Middle Ages, when the area was used to house those who’d fallen sick with the plague.
