Does time in barrel change the taste?

After fermentation, Plaisir du Vin 2022 rests quietly in barrel. Nothing dramatic happens overnight. It’s a slow process, and that’s the point.

The wine takes in tiny amounts of oxygen, which helps soften the tannins and bring everything into balance. The fruit becomes more relaxed, the texture smoother. You might notice a touch of warmth, a gentle hint of spice, more depth, but never at the expense of freshness.

What you feel in the glass is a wine that’s more rounded, more comfortable in itself.
It unfolds gradually, sip after sip.

Not rushed.
Not forced.
Just given the time it needs.

It’s not just about days.
It’s about oxygen + wine style.

Once you open a bottle,
oxygen starts changing it, slowly.

Here’s the real breakdown:

🍷 Red wine
• 3–5 days
• Re-cork it tightly
• Store it in a cool, dark place
• Lighter reds (Pinot, Gamay) = closer to 3 days
• Fuller reds (Cabernet, Syrah) = up to 5 days

🥂 White & rosé
• 2–4 days
• Always in the fridge
• Crisp wines (Sauv Blanc) fade faster
• Fuller whites (Chardonnay) last longer

✨ Sparkling wine
• 24–48 hours
• ONLY with a proper sparkling stopper
• Keep it cold
• Without a stopper = bubbles gone in hours

🚨 How to know if it’s past its best
• Smells like vinegar or wet cardboard
• Tastes flat or bitter
• Color looks dull or brownish

💡 Pro tip (most people don’t know this):
The less air in the bottle,
the longer it lasts.
So if it’s half empty, drink it sooner.
