♧Ingredients
• 2 ripe, firm avocados, diced
• 1 large cucumber, diced
• 1 cup tomatoes, 1/2 cup red onion, finely diced
• 2 tablespoons fresh cilantro or dill, chopped.
• 3 tablespoons extra virgin olive oil
• 2 tablespoons fresh lime juice (about 1 lime)
• 1 teaspoon honey
• 1/2 teaspoon salt
• 1/4teaspoon black pepper
• Pinch of red pepper flakes
♧Instructions
● Soak your diced red onion in cold water for 10 minutes to remove the sharp bite, then drain thoroughly.
● In a small bowl or jar, whisk together the olive oil, lime juice, honey, salt, pepper, and red pepper flakes.
● In a large mixing bowl, gently toss together the avocado, cucumber, tomatoes, and drained red onions.
●Pour the dressing over the salad, sprinkle with your fresh herbs, and toss gently until everything is lightly coated.
●Taste, adjust salt as needed, and serve immediately.
