🍬 HOMEMADE CHEWY CARAMEL TOFFEE RECIPE
INGREDIENTS
• Granulated sugar – 1 cup (200g)
• Brown sugar – 1 cup (200g)
• Butter – ½ cup (113g)
• Liquid milk or evaporated milk – 1 cup (240ml)
• Glucose syrup or corn syrup – ¼ cup (80g)
• Salt – ¼ teaspoon (1.5g)
• Vanilla extract – 1 teaspoon (5ml)
METHOD
Prepare your pan: Line a square baking pan with parchment paper and lightly grease it with butter.
Combine the sugars: Pour the granulated sugar, brown sugar, milk, and glucose syrup into a heavy-bottomed saucepan. Stir over medium-low heat until the sugars dissolve.
Cook the mixture: Add the butter and salt. Continue cooking over medium-low heat, stirring frequently to prevent the mixture from sticking or burning.
Monitor the temperature: Cook until the caramel reaches approximately 120–125°C (248–257°F) for chewy toffee. Use a candy thermometer for the best results. The final texture depends on the temperature reached.
Add vanilla: Remove the saucepan from the heat and carefully stir in the vanilla extract.
Pour into the pan: Immediately pour the hot caramel into the prepared pan. Spread it evenly without scraping any burnt residue from the bottom of the saucepan.
Allow it to cool: Leave the caramel at room temperature until it becomes firm enough to cut. This may take several hours.
Cut into pieces: Lift the set caramel from the pan and cut it into small squares or rectangles using a lightly buttered knife.
Wrap and store: Wrap individual pieces in wax paper or suitable candy wrappers. Store in an airtight container in a cool, dry place.
❤️ TIPS FOR PERFECT CARAMEL TOFFEE
• For softer, chewier toffee: Cook to the lower end of the recommended temperature range.
• For firmer toffee: Cook closer to 125°C (257°F).
• For a richer flavour: Use good-quality butter.
• To prevent graininess: Avoid vigorous stirring after the sugar has dissolved.
• For a smooth finish: Use a heavy-bottomed saucepan and maintain steady heat.
⚠️ Safety tip: Hot caramel can cause severe burns. Avoid tasting it while cooking, and keep children away from the saucepan.
Storage: Keep the wrapped toffees in an airtight container in a cool, dry place. Humid conditions can make them sticky.
