🍛 Yellow Rice (කහ බත්) – 100 pax setup 🔥
Rich flavour, perfect colour & wedding quality taste ✨
🧾 Ingredients (100 pax)
🍚 Rice
Samba Rice – 10 kg (1 pax ≈ 100g raw)
🥥 Liquid base
Thick Coconut Milk – 5 Liters
Water – as needed (approx 12–13L total cooking liquid)
🌿 Spices
Turmeric Powder – 5 tbsp
Salt – to taste (~200g approx)
🌶️ Aromatics
Big Onions – 1.5 kg (sliced)
Garlic – 200 g (chopped)
Ginger – 200 g (chopped)
Green Chilies – 150 g (split)
🌿 Whole spices
Cinnamon sticks – 15–20 pcs
Cardamom – 20 pcs
Cloves – 20 pcs
Pandan leaves (Rampe) – 10–15 pieces
Curry leaves – good handful (20+ sprigs)
🥜 Extras (wedding style)
Cashew nuts – 500 g
Raisins – 300 g
🧈 Fat
Ghee / Butter – 500 g – 700 g (flavour boost)
Oil – 500 ml
👨🍳 Cooking Method (Large batch catering style)
1️⃣ Prep
Rice wash කරලා 20–30 min soak කරන්න
Cashew + raisins lightly fry කරලා side එකට දාගන්න
2️⃣ Temper base (big pot / handi)
Oil + ghee heat කරන්න
Cinnamon, cardamom, cloves add කරන්න
Onion + garlic + ginger + green chili sauté කරන්න
👉 Golden colour + good aroma එනකම්
3️⃣ Add rice + spices
Soaked rice add කරලා 2–3 min lightly fry කරන්න
Turmeric + salt add කරන්න
4️⃣ Add liquid
Coconut milk + water add කරන්න
👉 Ratio (important):
1 kg rice → ~1.5L liquid
10 kg → ~15L (adjust fire + rice type අනුව)
5️⃣ Cook
High flame → boil
Then low flame → cover කරලා cook කරන්න
👉 Catering tip:
Bottom burn avoid කරන්න → occasionally mix
Large batch නම් “double pot system” use කරන්න (steam style)
6️⃣ Finish
Rice 90% cook වෙද්දි
Curry leaves + rampe add කරන්න
Fried cashew + raisins mix කරන්න
👉 Final fluff gently (don’t mash)
