🍗 RECIPE
Ingredients
2 lb chicken thighs/drumsticks
1½ cups buttermilk
1 tbsp hot sauce
2 cups all-purpose flour
½ cup cornstarch
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp salt
½ tsp cayenne
Neutral frying oil
Method

1. Marinate: Mix chicken with buttermilk, hot sauce and seasonings. Refrigerate for at least 2 hours.

2. Make coating: Combine flour, cornstarch and seasonings.

3. Create crispy flakes: Drizzle a few tablespoons of the marinade into the flour and lightly rub it together to create small flour clusters.

4. Double coat: Chicken → flour → buttermilk → flour again.

5. Fry: Fry in 350°F / 175°C oil until deeply golden and the thickest part reaches 165°F / 74°C.

6. Drain properly: Rest on a wire rack so the crust stays crispy.

🍗 Recipe — Extra Crispy Chicken
🛒 Ingredients

Chicken

2 lb chicken thighs/drumsticks
1½ cups buttermilk
1 tbsp hot sauce
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika

Crispy Coating

2 cups all-purpose flour
½ cup cornstarch
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp salt
½ tsp cayenne pepper

For frying

Neutral frying oil
👨‍🍳 Method

1. Marinate
Mix chicken with buttermilk, hot sauce, salt, pepper, garlic powder and paprika. Cover and refrigerate for at least 2 hours, preferably overnight.

2. Make the crispy coating
Mix flour, cornstarch and seasonings in a large bowl.

3. Create the crunchy flakes 🔥
Drizzle 2–3 tablespoons of the buttermilk marinade into the flour mixture and rub it lightly with your fingers. This creates little flour clumps that become extra-crispy pieces.

4. Coat the chicken
Take each chicken piece from the marinade and press it firmly into the seasoned flour. For an even crunch, dip it back into the buttermilk and then into the flour one more time.

5. Fry
Heat oil to approximately 350°F / 175°C. Fry chicken in batches without overcrowding the pan.

Cook until the coating is deep golden brown and the chicken reaches a safe internal temperature of 165°F / 74°C.

6. Rest
Place the chicken on a wire rack rather than directly on paper towels. This helps preserve the crispy crust.

🍔 Ultimate Cheese Smash Burger — “Save This Recipe!”
🛒 Ingredients — 2 Burgers
1 lb (450 g) ground beef — 80/20
4 slices American cheese
2 brioche burger buns
1 small onion, thinly sliced
2 tbsp mayonnaise
1 tbsp ketchup
1 tsp yellow mustard
1 tsp pickle juice
1 tbsp butter
Salt
Black pepper
Pickles
Shredded lettuce
🔥 Cooking Steps

1. Make the sauce
Mix mayonnaise + ketchup + mustard + pickle juice. Set aside.

2. Prepare the beef
Divide the ground beef into 4 loose balls. Don't overwork the meat.

3. Get the skillet HOT
Heat a cast-iron skillet or griddle until very hot.

4. Smash 🔥
Place one beef ball on the skillet. Immediately press it firmly into a very thin patty using a sturdy spatula. Season with salt and pepper.

5. Crispy edges
Cook for about 2 minutes, until the edges become deeply browned and crispy. Flip.

6. CHEESE 🧀
Place one slice of American cheese on each patty. Cook for another 30–60 seconds until melted.

7. Toast the buns
Butter the brioche buns and toast them cut-side down until golden.

8. Build the burger 🍔

Bottom bun → sauce → lettuce → cheesy patty → cheesy patty → caramelized onions → pickles → sauce → top bun.

9. Final reveal 🔥
Press gently, cut in half and capture that cheese pull for the Reel.

⭐ TASTY EMBER Signature Sauce

For an extra USA-style flavor:

2 tbsp mayo + 1 tbsp ketchup + 1 tsp mustard + 1 tsp pickle juice + tiny pinch of garlic powder.

Mix well and chill for 10 minutes.

Pro tip: Don't press the burger after flipping. The initial smash creates the crispy crust; pressing afterward can squeeze out the juices.
