Harvesting is the first step in Ceylon Cinnamon's craft, and it's the one machines still can't replace. The harvester, she reads the bark like a craftsman reads grain in wood, knowing exactly when a stem is ready, exactly how deep to cut & at what angle without damaging other juvenile stems
This is a skill passed down through generations, not manufactured. Few families still continue it Fewer estates still practice it at this grade. It's why true Ceylon Cinnamon stays rare, not scarce by design, but scarce because so few hands can still do this work.
