Refreshing Lime Cheesecake Bars 🍈🍰
Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the filling:
16 oz cream cheese, softened
1 cup granulated sugar
1/4 cup sour cream
3 large eggs
1/4 cup fresh key lime juice
1 tablespoon key lime zest
1 teaspoon vanilla extract
For the cream cheese layer:
8 oz cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
For the topping:
Whipped cream
Lime slices for garnish
Directions:
Preheat oven to 325°F (163°C). Line an 8x8-inch baking pan with parchment paper, allowing the paper to hang over the sides for easy removal.
In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan to form the crust.
Bake the crust for 10 minutes, then remove from oven and let cool while preparing the filling.
In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add the sour cream, eggs, key lime juice, lime zest, and vanilla extract, and mix until fully combined.
Pour the filling over the cooled crust, spreading it evenly.
Bake for 35-40 minutes, or until the center is set and the edges are lightly browned. Let cool completely.
For the cream cheese layer, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Spread this layer evenly over the cooled cheesecake filling.
Refrigerate the cheesecake bars for at least 2 hours before slicing.
Slice into bars and garnish with whipped cream and lime slices before serving.
