Mini kunafa cheesecake (quick and easy for Ramadan dessert)
English version 💛
First, you have to take the kunafa dough and cut it into small pieces. Then, melt 50 grams of butter and mix it with the dough. After that, take a cupcake mold and place the dough inside, pressing it along the base and the sides. Use a small glass to help press it down and seal it in place.
Then, in a bowl, add cream cheese — you can use 200 grams for a small quantity. After that, add 50 grams of icing sugar (powdered sugar), one small teaspoon of vanilla extract, and almost one and a half tablespoons of flour. Mix everything very well and then add a little whipping cream.
We take our mixture and put it in the fridge. Then, we place the kunafa molds that we made in the oven so they brown a little and cook properly, at a temperature of 180°C for about 15–20 minutes.
We take them out, add the cream cheese mixture, and put them back in the oven for about 20 minutes, with heat from above and below, until you see that they are golden.
Finally, we take them out of the oven and pour sugar syrup over them, which is made with a half-and-half mixture: equal parts sugar and water.
You can decorate them with edible flowers, walnuts, pistachios, or whatever you like. This part is really up to each person’s taste.
They can be eaten hot or cold. Honestly, they are very good both ways, and I hope you like them.
