Tajine marocain de coings, viande et miel
Une recette marocaine traditionnelle devenue assez rare, qui associe la tendreté de la viande au goût légèrement acidulé du coing et à la douceur du miel.
Ingrédients – 5 à 6 personnes
1 kg de viande d’agneau ou de bœuf
4 gros coings
2 oignons émincés
2 cuillères à soupe de miel
1 cuillère à café de cannelle
1 cuillère à café de gingembre
½ cuillère à café de curcuma
Quelques filaments de safran
2 cuillères à soupe d’huile d’olive
30 g de beurre
Sel et poivre
1 petit bouquet de coriandre
Environ 400 ml d’eau
Quelques graines de sésame grillées
Préparation
Dans un tajine ou une marmite, faire revenir la viande avec les oignons, l’huile d’olive, le gingembre, le curcuma, le safran, le sel et le poivre.
Ajouter la coriandre et l’eau. Couvrir et laisser mijoter à feu doux jusqu’à ce que la viande soit bien tendre et que la sauce soit légèrement réduite.
Laver les coings, les couper en quartiers et retirer les cœurs. Les faire cuire séparément dans un peu d’eau jusqu’à ce qu’ils deviennent tendres tout en conservant leur forme.
Dans une poêle, faire fondre le beurre avec le miel et la cannelle. Ajouter les quartiers de coing et les laisser doucement caraméliser.
Disposer la viande au centre du tajine, ajouter la sauce puis placer harmonieusement les coings caramélisés autour de la viande. Terminer avec quelques graines de sésame grillées.
Conseil : servir bien chaud avec du pain marocain. Le contraste entre la viande salée, le coing parfumé et le miel donne tout le caractère à ce tajine traditionnel.

Moroccan Quince, Meat and Honey Tagine
A traditional Moroccan dish that has become quite rare, combining tender meat with the slightly tangy flavor of quince and the sweetness of honey.
Ingredients – Serves 5 to 6
1 kg lamb or beef
4 large quinces
2 onions, thinly sliced
2 tablespoons honey
1 teaspoon cinnamon
1 teaspoon ground ginger
½ teaspoon turmeric
A few saffron threads
2 tablespoons olive oil
30 g butter
Salt and black pepper
1 small bunch fresh coriander
About 400 ml water
A few toasted sesame seeds
Preparation
In a tagine or large pot, gently brown the meat with the onions, olive oil, ginger, turmeric, saffron, salt and pepper.
Add the coriander and water. Cover and simmer over low heat until the meat is very tender and the sauce has slightly reduced.
Wash the quinces, cut them into quarters and remove the cores. Cook them separately in a little water until tender while keeping their shape.
Melt the butter with the honey and cinnamon in a pan. Add the quince quarters and gently caramelize them.
Arrange the meat in the center of the tagine, spoon the sauce over it and place the caramelized quince pieces around the meat. Finish with a few toasted sesame seeds.
Tip: serve hot with Moroccan bread. The combination of savory meat, fragrant quince and sweet honey gives this traditional tagine its distinctive flavor.
