Chinese pork stomach soup recipe—comforting, warming, and very popular for nourishment.
Chinese Pork Stomach Soup
Ingredients
1 pork stomach (about 500–700 g)
300 g pork ribs or lean pork (optional but recommended)
10–15 white peppercorns (crushed)
5–6 slices ginger
1–2 tbsp Shaoxing wine
Salt, to taste
Optional additions (choose one style):
Peppery style (traditional): extra white pepper
Herbal style: 2–3 dried red dates, a small handful of goji berries
Creamy style (Cantonese): a little evaporated milk at the end
How to Clean the Pork Stomach (Important!)
Turn pork stomach inside out.
Rub thoroughly with salt + flour (or cornstarch) for 2–3 minutes.
Rinse well.
Repeat once more if needed.
Blanch in boiling water with ginger and wine for 2 minutes, then rinse and slice into strips.
Cooking Instructions
Blanch meat:
Blanch pork ribs/lean pork briefly to remove impurities. Rinse.
Start the soup:
Add pork stomach, pork, ginger, crushed white pepper, and Shaoxing wine to a pot.
Add enough water to fully cover ingredients.
Simmer:
Bring to a boil, then reduce to low heat.
Simmer 1.5–2 hours (or 40–50 min in a pressure cooker).
Season:
Add salt near the end.
Add red dates/goji berries if using (last 20 minutes).
Finish:
Soup should be milky-white and fragrant.
Optional: add 1–2 tbsp evaporated milk for richness.
Tips
White pepper is key—don’t substitute black pepper.
Longer simmering = sweeter, creamier soup.
