Lemon and Ricotta Pasta 🍋🌿 Make a super tasty Lemon and Ricotta Pasta made with Galbani Ricotta. We absolutely love this zesty lemon ricotta pasta with spinach and peas. It makes a delicious weeknight meal ready in less than 15 minutes. It’s super fresh and is perfect to make during summer months! flavor and minimal effort, what’s not to love 🤩👏🏼 Galbani Ricotta is available in supermarkets and outlets across Malta 😍 Ingredients; (serves 2) - 1/2 tub of Galbani Ricotta - 150g Pasta, any shape - 100g Parmareggio Parmesan Cheese (plus extra for serving) - Handful of Baby spinach - 200g Frozen Bonduelle Peas - 1 Lemon - 1 tsp Garlic Purée - Black Pepper - Chilli Flakes Method; - Pop your pasta on to cook. - To a frying pan add some olive oil and the garlic purée. - Add the Galbani Ricotta with a ladle of pasta water and mix everything together. - Add the Parmesan, zest of half a lemon, squeeze the other half of lemon and some black pepper and mix everything together. - To the pasta add the peas and to the ricotta mix add the spinach. - Once the pasta and peas are cooked, drain and add to the ricotta sauce and mix everything together. - Once it’s all heated through, plate up and ad some more Parmesan to the top with black pepper and chilli flakes…enjoy guys!! ☺️🧄
