After the amazing success of our last wine tasting, we are so excited to bring you the 2nd Edition! 🥳 Join us for another fantastic evening as Dalmas Collective. Here are all the details:

Join us for the second edition of this unique culinary experience set within the beautiful olive grove at Ta’ Xmun in Żebbuġ, where the natural surroundings create a warm and inviting atmosphere.

For this edition, the menu celebrates the flavours of summer — beginning with a selection of nibbles, followed by a paella featuring a surprise ingredient. An intermediate course of salmon gravlax salad leads into oven-fired pork collar served with apple chutney sauce, freshly baked potatoes, and seasonal vegetables, before finishing with a summer fruit mousse dessert. Each dish has been thoughtfully prepared to complement the wines served throughout the evening.

Accompanying the experience is a curated tasting of 12 wines, offering a diverse journey through different styles and regions, with a strong focus on expressive, quality-driven selections.

Combining exceptional food, carefully selected wines, and a stunning outdoor setting, this evening promises a relaxed experience of indulgence and discovery. 🍷

This pure and ethereal Colombard reveals citrus & floral notes, carried by a vibrant freshness and delicate finesse. Cirrus is an invitation to lightness – a modern, crisp white wine, perfect for savouring the moment.

This wine sits firmly in the modern “glou-glou” / chillable red category — light, juicy, vibrant, and very easy to drink.

Fresh red berry fruit: sour cherry, raspberry, cranberry with a touch of white pepper, wild strawberry, pomegranate & subtle spice.

Very low tannins → soft and smooth
Bright acidity → refreshing and lively

Best served lightly chilled (12–14°C)
& super versatile with food;
Amazing for casual drinking, charcuterie, pizza, grilled vegetables, burgers, or even slightly spicy dishes.

Soalheiro once again stood out in the latest ratings from Wine Advocate, the international publication founded by Robert Parker, reinforcing its position as one of the most consistent Portuguese brands on international markets.

The highest score was awarded to the Edição 40 Anos L15 (2015), with 95 points. The Primeiras Vinhas 2024 and the Revirado Alvarinho 2023 received 94 points, while the Granit 2024, Pé Franco 2023 scored 93 points.

The premium wine range are coming from carefully selected vineyards. These vineyards may have specific characteristics, such as unique soil types, optimal microclimates, and well-established vines, which contribute to the wines’ exceptional quality. These wines are aged for an extended period to develop complexity, depth, and character with various aging techniques, such as aging in oak barrels, to impart additional flavors and textures to the wines.

Black pepper, plum and raspberry in the bouquet, accompanied by some green herbs. The body is dense and compact, with plenty of grip, youthful red and somewhat dark fruit, such as blueberries and blackberries, flanked by subtle nuances of fennel and cocoa.

Centered around a traditional fire oven, the menu highlights rich, rustic flavours—beginning with a selection of nibbles, followed by homemade ricotta gnocchi and a choice of slow-cooked pork collar or tender lamb shank, served alongside freshly baked potatoes and seasonal vegetables, and finished with a secret dessert duo. Each dish is thoughtfully prepared to complement the wines.

Accompanying the evening is a curated tasting of 15 wines, offering a diverse journey through different styles and regions, with a strong focus on expressive, quality-driven selections. 100% Cabernet Franc, a low-yield variety, resistant to rot & insect attack, perfect for aging wines. It provides structure, evolutionary potential & great elegance as well as fruit & floral aromas.

Cold maceration for 2 weeks, followed by a spontaneous alcoholic fermentation in 6000 liter stainless steel tank (no commercial yeasts were used.) Gently pressed & aged for 12 months in new 300 liter French oak barrels where malolactic fermentation takes place naturally & spontaneously. Stabilization is also natural, the wine is in deposits during the coldest months, temperatures can go to minus 15º C.

Cherry color with garnet rim, dark & bright. Nose is floral with lots of berries, vibrant red fruit, complexity, mineral, smooth smoke & a touch of bread dough. Vibrant palate, & well-defined flavor with clean fruit. Fresh but with a good body, with a polished, sweet, subtle and elegant tannins. Long, with a fruity and balsamic aftertaste, which gives it a delicate, dry & structured finish.
