Meet the Bavette Steak 🥩

Also known as flank steak, Bavette is loved for its rich, beefy flavour and loose grain that makes every bite incredibly satisfying. It’s a versatile cut that’s perfect for quick, high-heat cooking and works beautifully in dishes like tagliata, steak salads, wraps, or served simply with roasted vegetables.

Our tip: Cook it to medium-rare, let it rest for 5–10 minutes, then slice it thinly against the grain for the most tender result 😉

The ultimate BBQ steak dinner starts here 🥩🔥

Perfectly grilled Prime Rib-eye steaks, crispy jacket potatoes and a rich homemade herbed butter that melts over every slice. Simple ingredients, big flavour, and guaranteed to impress at your next BBQ.

You’ll need:
For the steaks:
• 3 × 350g Prime Rib-eye steaks
• 1 tbsp olive oil
• Coarse salt & pepper
• 1 tbsp fresh rosemary, chopped
For the herbed butter:
• 100g salted butter, softened
• 1 tsp smoked paprika
• 1 tsp crushed black pepper
• 1 garlic clove, finely chopped
• 1 tsp fresh thyme leaves
To serve:
• 2 large potatoes, boiled until soft (skin on)
• Rocket & tomato salad

Method:
Mix together the softened butter, smoked paprika, black pepper, garlic and thyme.
Roll the butter into a log using cling film and chill for at least 1 hour.
Drizzle the rib-eye steaks with olive oil and season generously with salt, pepper and chopped rosemary. Leave to rest for 10–15 minutes.
Preheat your BBQ to around 250°C.
Wrap the potatoes in foil and place them on the BBQ.
Grill the steaks over high heat for 2 minutes per side to create a beautiful crust.
Lower the heat and continue cooking for 6–8 minutes, or until your preferred doneness.
Rest the steaks for 3 minutes before serving.
Top with a generous slice of the herbed butter and serve alongside the jacket potatoes and a fresh rocket & tomato salad.
