Stuffed Chicken Breast with Creamy Red Pepper Sauce ๐Ÿ—

Youโ€™ll need:

For the chicken:
โ€ข 4 Prime chicken breasts
โ€ข 250g ricotta
โ€ข 1 heaped tbsp grated parmesan
โ€ข Salt & pepper
โ€ข 2 tbsp chopped sundried tomatoes
โ€ข 1 tbsp chopped fresh basil
โ€ข 2 tbsp chopped walnuts

For the sauce:
โ€ข 100g Prime smoked bacon, diced
โ€ข 1 small onion, finely chopped
โ€ข 3 cloves garlic, sliced
โ€ข 2 tbsp olive oil
โ€ข Fresh thyme
โ€ข 1 red pepper, sliced
โ€ข 1 tbsp flour
โ€ข 150ml cream
โ€ข 250โ€“300ml chicken stock
โ€ข Salt & pepper
โ€ข Cooked rice to serve
