Mixed Grill Platter with Homemade BBQ Sauce 🔥

A little bit of everything, straight off the grill. This mixed grill brings together juicy lamb chops, chicken thighs, pork medallions, beef fillet and Maltese sausages, served with a rich homemade BBQ sauce.

Ingredients

For the mixed grill:

2 thick lamb chops
4 small boneless chicken thighs (or 2 large)
4 pork medallions
2 mini beef fillets
4 Maltese sausages
3 tbsp olive oil
Salt and pepper, to taste
Rosemary, oregano and thyme

For the homemade BBQ sauce:

1 small onion, finely chopped
2 cloves garlic
1 tbsp butter
2 sprigs fresh thyme or rosemary
1 tbsp kunserva
2 tbsp soy sauce
1 tbsp Worcestershire sauce
1 tbsp c***r vinegar
1 tsp grated ginger
2 tbsp brown sugar
1 tbsp smoked paprika
1 tbsp whole grain mustard
100–200ml water

Method:

Start by making the BBQ sauce. Saute together the butter, onion , garlic and herbs for 5 minutes to soften. Add in the kunserva and cook for 1 minute, then add in all the remaining ingredients, along with 100-200ml water. Mix together well, bring to the boil then allow to simmer and cook for 15-20 minutes. If you wish, you can blitz smoothly in a blender when ready.

For the meats, drizzle with olive oil, season with salt and pepper, rosemary, oregano and thyme. Massage into the meats and BBQ on a hot grill till brown around the edges and cook through.

Allow to rest for a few minutes, then serve the meats and sausages on a platter with the delicious BBQ sauce on the side.
