In the mood for seafood? Savour the rich, flakey flavours of this Honey Garlic Plank Salmon recipe:
Ingredients:
2 cedar planks
4 salmon fillets
3 tbsp melted butter
3 tbsp honey
2 cloves garlic, minced
1 lemon, zested and sliced
Salt and pepper to taste
Method:
1. Soak the planks in water at least 30 minutes while preparing ingredients and preheating the grill.
2. Preheat your Napoleon barbecue to 400°F with all burners on medium-low.
3. In a small bowl, mix melted butter, honey, garlic, lemon zest, and a squeeze of lemon. Reserve about ⅓ for serving.
4. Season the salmon with salt and pepper.
5. Place the planks on the grill and arrange the salmon on top. Brush with honey-butter and top with lemon slices.
6. Close the grill and cook 6-8 minutes. Brush again with honey-butter and cook 6-7 more minutes, until fish flakes easily and reaches 145°F.
7. Serve over rice, drizzled with the reserved honey-butter, or alongside baby potatoes and seasonal vegetables.
